Homemade Salsa

Anyone who knows me even a little knows that I love Mexican food and especially chips and salsa.

Here is my friend Michele’s recipe that I used to make my first batch of salsa:

6-1/2 pounds tomatoes (about 12 cups) – peel and cook until mushy

6 jalapeno peppers

12 long yellow peppers

3 to 4 peppers – assorted colors – chopped

2 large onions – chopped

1-1/2 cups white vinegar

2 Tablespoons salt

3 teaspoons minced garlic (or much more, like I did, for a stronger taste)

Cook all ingredients 1-1/2 hours uncovered on simmer. Process in warm, clean jars in water bath, 15 minutes for pints and 20 minutes for quarts. For less hot sauce remove seeds from jalepenos. (I removed about about 2/3 of the seeds for a slightly hotter than medium salsa.)

I quadrupled the recipe and it filled 27 pints and 6 half pints.

  • That looks soooo good! I’d like to come over for dinner tomorrow night if that’s alright with you. I’ll bring the chips!

Anytime! I would love that. Hey, with your fish tacos and my salsa we could have a little fiesta.

I opened up a jar of mine to try today and it is soooooo good. I don’t think i will ever buy premade salsa again. Michele has spoiled me too! I really had fun working on it with you.

  • Save some for me, I’ll be there in 3 weeks.

oh sure…now that we live in different states you get all homemade-salsa on me! where was that kim when we lived on 160th?! 🙂

  • Your canning has amazed and inspired me. I have always wanted to can from my garden. I am ashamed to admit that the busyness of my summer has kept me from my garden. I probably have ripe tomatores and green beans like shoe leather right now.

I would just LOVE to can. It all looks delicious!

  • Thanks for the recipe, Kim!
Making my first batch today, only I’m adding cilantro & lime juice to it. And I forgot the bell peppers – whooops, next batch!
Just hope I’m not up till midnight finishing it up. 😀
