Tortilla Soup Recipe

Brett told me tonight that this is his favorite thing that I make for dinner. I love it when one of the easiest dinners to make is a favorite! I found it online years ago and have made some changes to suite our family. This is our altered version. It was called “Quick N Easy Tortilla Soup”, but I like to call it “Recycle Bin Soup” because when I make it I fill my recycle bin with cans.

4 cups of chicken stock (or about three cans chicken broth)

1 can black beans

1 can kidney beans

1 can pinto beans

1 can corn (or a big scoop of frozen corn)

1 can diced tomatoes

2 chicken breasts cooked and diced (or the easy way…one can of chicken breast meat)

1 can tomato paste or tomato sauce

2 tsp cumin

1/8 cup taco seasoning (adjust amount to your taste)

Throw everything together and heat until warmed. Top with grated cheese, sour cream, and tortilla chips.

The best part about this recipe is you can totally adjust it to what you have in your cupboard. Substitute any kind of beans. Sometimes I just use all black beans. Sometimes I omit the tomato paste or sauce to make it more brothy. My mom has added mixed vegetables to it and said it turned out really good. It is also delicious with a can of green chilies, but I am the only one in my family that likes them so I don’t get it that way very often. My aunt tried rice in it and said it was great.
